Your volunteering will be always counted if:

-you did not do anything else exept for studying USMLE (CV gap explanation as "I was studying USMLE" is not a good idea (exact words from many PCs whom I contacted before applying);

-if you apply to the hospital which has close relationship with curch (some1 mentioned In His Image Hospital as an example. This one in particular asking for LOR from the priest in addition from doctors);

-and the most important reason is that by doing volunteering you can make connections. This is easier to do if you r volunteering in the hospital as oppose to church. If you meet the doctor who will allow you shadow him it would be just great.
